Noodles are a food product made from unrisen dough that is cooked in water. This group of food products is also known as pasta. You can choose between fresh or dried noodles depending on the type of noodles; some noodles are available in both varieties. Noodles originated in Asia, where this type of pasta traditionally is one of the staple foods.
The word ‘noodle’ is derived from the German word Nudel, which means ‘pasta’. However, the word ‘noodle’ is not as commonly used in the Netherlands − that is, not in reference to all types of pasta. But we do distinguish between the many different types of noodles, such as: wheat noodles, egg noodles, instant noodles, glass noodles, potato noodles, buckwheat noodles, and − last but not least − rice noodles.
Rice noodles are popular because of their light texture and neutral taste, which makes them combine well with various sauces, vegetables, meat and seafood. They are also gluten-free and thus suitable for people with gluten intolerance.
The origin of rice noodles trace back to Asia, where they have been an essential part of cuisines in countries such as Thailand, Vietnam and China for centuries. The basic ingredient for rice noodles is (ground) rice; the rice flour is mixed with water to make a dough. This dough is then rolled out, cut and dried to produce the characteristic noodle shape. The process varies slightly depending on the region and the desired texture of the noodles.
There is a surprisingly diverse range of rice noodles available around the world, with a multitude of varieties that differ in thickness, shape and texture. The thickness of the rice noodles affects the texture and cooking time. Thicker noodles tend to have a firmer texture and a little more bite, while thin noodles are softer and more delicate. Here are five examples of popular types of rice noodles in different thicknesses:
Rice noodles do not only come in the traditional flat shape but in various other shapes, such as round, flat sheets for making fresh spring rolls and square sheets for making Vietnamese spring rolls. These sheets are also known as rice paper.
The texture of rice noodles ranges from soft and smooth to tough with a bite. It is influenced by the thickness of the noodle and how long it is cooked. Thick noodles usually have a firmer texture, while thin noodles are softer. Some rice noodles only need to be soaked briefly in hot water to become soft, while others need to cook for several minutes to achieve the right texture.
The versatility of rice noodles extends beyond traditional dishes. Besides being an essential part of iconic dishes such as pho, pad Thai and spring rolls, they are increasingly used in restaurants in modern Dutch cuisine with a twist. Their neutral flavour and soft texture make them an ideal ingredient for a wide range of dishes, an addition to spicy sauces or in sophisticated broths.
The Dutch, for example, love stir-fried dishes, and gluten-free rice noodles are often used as a substitute for traditional noodles or rice. For example, imagine chicken, vegetables, and rice noodles stir-fried in a teriyaki sauce. But salads, soups, stews and Vietnamese spring or summer rolls are often served with the easy-to-digest rice noodles.
Rice noodles also lend themselves well to various cooking methods, including stir-frying, baking, deep-frying and cooking in soups. And with Mooijer-Volendam’s extensive product range, our customers will never miss out. Thanks to our versatility, quality and completeness, more and more customers choose us as their wholesaler for the catering industry or fish mongers, Asian shops, speciality shops and large retailers.
Most of the rice noodle range at Mooijer-Volendam comes from Vietnam and Thailand. Below, we briefly highlight the most popular rice noodle varieties in our product range.
The Vietnamese rice noodles we would like to highlight are our Nam Vang Style and our Banh Pho noodles. These rice noodles are a key ingredient in Vietnamese noodle soup, also known as pho. The rice noodles have a flat shape and absorb flavours excellently. They are usually served in a rich broth based on pork or chicken, flavoured with various herbs and spices.
A typical bowl of Bun Nam Vang soup – featuring Nam Vang Style noodles or Banh Pho noodles – may contain ingredients such as: fried pork, chicken, shrimps, seafood, spring onions, shallots, bean sprouts, coriander, fried garlic, fish sauce or chilli sauce. Although this noodle soup originated in Cambodia, it has acquired its own unique Vietnamese interpretation and has become a popular dish in Vietnam and in Vietnamese restaurants worldwide.
At Mooijer-Volendam, we sell various types of Bahn Pho rice noodles: premium Bahn Pho rice noodles, Bahn Pho rice noodles 1 mm, rice noodles 3 mm, rice noodles 5 mm and Bahn Pho rice noodles 10 mm. Our range of Thai rice noodles is quite similar to Vietnamese rice noodles. We also sell these in various sizes: Thai rice noodles 1 mm, Thai rice noodles 3 mm, Thai rice noodles 5mm, and Thai rice noodles 10 mm. All these rice noodles are gluten-free.
In general, Thai rice noodles and Vietnamese rice noodles have the same qualities. There may be some subtle differences in texture – Vietnamese rice noodles usually have a softer texture when cooked; Thai rice noodles remain slightly firmer. Traditionally, rice noodles are used in various dishes: Vietnamese rice noodles are often used in dishes such as the aforementioned pho and goi cuon (fresh spring rolls). Thai rice noodles are often used in, for example, pad Thai and curry dishes.
To complete our product range, Mooijer-Volendam offers dried rice noodles and instant rice noodles. Our variety of instant rice noodles are available with the following flavours: rice noodles with beef flavour, rice noodles with chicken flavour and vegetarian rice noodles.
